Orange chicken skewers

After seeing this done on Ready Steady Cook (which I love the new set for by the way!) I decided to give it a go. However it looked quite juicy and yum on the show, mine turned out rather dry instead. Tasty but would need a dip to accompany it in future.

Orange Chicken Skewers

Serves 1

Ingredients

4 chicken mini-fillets
1 tbsp soy sauce
1 orange, zest only
2 tbsp olive oil

You'll need 4 wooden skewers, soaked in water for ten minutes before using

Method
1. Place the chicken in a small bowl and add the soy sauce, orange zest and olive oil. Leave aside for five minutes to marinate.
2. Thread each chicken mini-fillet onto a skewer. Heat a griddle pan and fry the chicken skewers for three minutes on each side, or until cooked through. Serve immediately.
