Raspberry Muffins and Chocolate chip muffins

Tonight i made a few muffins.... I had been craving a raspberry mufin for a while now and decided I would make some.

Raspberry Muffins (adapted slightly from a recipe found on allrecipes.com

Creates 6 muffins

Ingredients

2/3 cup all-purpose flour
1/2 cup rolled oats
2 tablespoons packed brown sugar
1.5 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/2 cup milk
1/2 egg, beaten
1 cup fresh raspberries

Recipe
1. Preheat oven to 190˚C
2. Line a muffin pan with paper or foil muffin liners, or grease with vegetable oil spray.
3. In a medium bowl, stir together the flour, rolled oats, sugar, baking powder and cinnamon.
4. Add the milk and egg, mix until well blended, then fold in fresh berries. Fill muffin cups 2/3 full.
5. Bake for 20-25 minutes in the preheated oven, until tops are golden brown and muffins spring back to the touch.

My hubby isn't fond of fruit and veg as I've mentioned beore so I made him some chocolate chip muffins while I was at it. Very similar to the raspberry muffin recipe:

    Thanks for the comment! As for your question, sorry I must have watched too much Rachael Ray, EVOO is extra virgin olive oil. But regular olive oil would work too!
