Pork and Mango Stir Fry

My hubby, Rob, is working in Liverpool these days which means there are loads more options for me for dinner. I threw this together for myself and absolutely loved it!



Pork and Mango Stir Fry

Serves 1

Ingredients

1 tbsp vegetable oil
150g pork pieces
2-3 tbsp mango chutney
1 tbsp oyster sauce
1 tsp soy sauce
pinch of dried chili flakes
handful of mixed vegetables (I used broccoli, red pepper, onion and peas)
2 rings of fresh pineapple chopped up
Add to wok noodles for one.

Recipe
1. Heat the oil in a wok or frying pan and add the pork. Stir fry until cooked through (about 5 minutes)
2. Add the mango chutney, oyster sauce, soy sauce and chili flakes and stir through. Cook for 1 minute.
3. Add the vegetables and pineapple and cook for 3-5 minutes.
4. Stir in the noodles and cook for 1 minute and serve.

  1. This looks delicious. I love throw together meals especially when they turn out well.
    Ruth do you have a decent fishmonger near you? I am in Lisburn and have to rely on Tesco's or Sainsburys. I hate not having a decent fishmonger.

    About the fishmongers they are few and far between now. But one of the butchers (Fred Elliots) in Banbridge has a little section for fish and I mean little, I end up at Tesco or Sainsburys too for it - perhaps we need to start a business? lol
