Creamed Corn

I first had this when I was in Tennessee on my internship and LOVED it. So i decided to give making it a go.

Creamed Corn

Makes 2 portions

Ingredients

1 tbsp butter/margarine
1 tbsp flour
1/2 cup of milk
200g of corn
2/3 sliced button mushrooms (optional)
1 sliced red pepper (optional)

Recipe
1. Melt butter, stir in flour.
2. Add milk slowly, stirring with whisk until completely blended, thickened and gently bubbling.
3. Add kernels and simmer about 3 minutes. (Add mushrooms and red pepper)
4. Season with salt and white pepper.

You can add all sorts of things to this to add different flavours e.g. chives, cheese, carrots, bacon (precooked), maybe even some spices like curry powder.

Very tasty, quick and easy.
