I found this recipe on the Dinner with the Bickfords blog and loved the look of it. It's good at the minute to try some new mince beef recipes.
The original recipe doesn't have any of the chili in it that I added, which added good flavour but was a little strong (I've wrote in reduced suggestions for the recipe below).
BBQ Mince Beef
Serves 3-4
Ingredients
500g ground beef
1/2 white or yellow onion, diced
1 can diced tomatoes
1/2 cup frozen corn
1/2 cup bbq sauce
1 chopped and deseeded red chilli
1/4 tsp chili powder
1/2 cup sliced green onion
Directions
1. Brown beef and yellow onion in skillet over medium high heat. Drain excess fat from pan and place back on heat.
2. Add corn, tomatoes and bbq sauce, mixing thoroughly.
3. Bring to a simmer and reduce heat to medium low. Simmer 15 minutes until thick.
3. Serve beef topped with green onions.
I think a few edits I might make to this in future for different variations would be to add a little shredded cheese, maybe some bacon or even various other veggies.
