Pancake Tuesday

In need of a pancake recipe for tomorrow? Try out either French Crepes



or a stack o American pancakes!



Or maybe you could use Nigella's pancake mix.... we love this one for it's convenience and ease of use

Instant Pancake Mix(From Nigella Express)
600g flour
3 tbsp baking powder
2 tsp bicarbonate of soda
1 tsp salt
40g vanilla/caster sugar

Recipe
Mix everything together and store in an airtight container

When you want some pancakes whisk together....
150g pancake mix, 1 egg, 250ml milk, t tsbp melted butter

Heat your pan with no oil, spoon batter onto pan to cook. When bubbles appear on the surface flip them over to cook until golden on each side.

Nigella makes 15 pancakes about 8cm in diameter from this mix, but we like nice big pancakes and get 6 or 7 big ones out of it.

Oopsy Cakesy.

Today we had a "Fun Day" at church and I had bought a High School Musical box of cake mix for the group to make to go with lunch. The girls got into making it while I got o with sorting other lunchy bits out, so they emptied the box and got on with it. Apparently Katie asked me if both the bags of stuff had to go into the mixture and apparently I said "Yes" but I can't recall this conversation. So she chucked it all together, mixed in the butter, water and eggs and poured into the tray then put it all in the oven to bake. While I was clearing up the rubbish I wondered where the icing had gone to and discovered that the icing had been put into the cake mixture and was now in the oven. We worried it all may turn out a little too sweet but left it to bake and we got on with lunch and playing with HSM stickers.



When it came to eating the cake it looked good, smelled good and had a slight glaze on the top from all the sugar in it! It was real good, even with the icing IN it not ON it. So an experiment gone wrong but that turned out good and we had fun decorating it with the HSM rice paper decorations and sugary stars.

Northern Irish Food News

Today saw the first ever Cupcake Camp NI at the Blick Studios in Belfast, actually in Europe even!!!! I had hoped to be there with some cupcakes but got a little busy with work and had to bail out.

I'm looking forward to hearing how it all worked out and hope I can join in next summer!

Also, Sainsburys have been in touch asking for a little plug and seeing as I'm a Sainsburys fan I thought I may just pass it on.
They're running a campaign called GR'EAT BRITAIN' ON A PLATE to encourage people who are planning a holiday at home to try out more local food. Check out the press release here

Finally, you may remember that I was at the Enjoy a Taste of Scotland event in April 08, well it turns out that now there will be a Northern Irish event too! Tesco's are hosting "Taste Northern Ireland" in Belfast on 11th and 12th September in Custom House Square with free entrance to the public. This event aims to "showcase and celebrate the fantastic breadth and quality of Northern Ireland’s produce to a wider audience." There will be lots of local exhibitors, a celebrity cookery theatre, kids cookery and more. I'll keep you posted with any other details I receive!

Almost Anti-Valentines Post

Well it's Valentine's Day today so I hope everyone who is doing something to mark the occasion has a great time. Rob and I don't really celebrate Valentines, we are making sure to spend time together but that's because Rob is away from home Mondays to Fridays now so our time together has just fell on Valentines. This is unfortunate because we had hoped to go out for dinner together but everywhere is going to be more expensive than usual and cheesed up with Valentines stuff so we'll probably be having a take out or I may just be cooking, whatever we're doing we'll be supporting this little project as we do it:


'Turn me on, Turn it off’, asking the nation what’s green and sexy this Valentine’s. See Britain Unplugged for more details.

This is the brainchild of The Energy Saving Trust who are on a mission to turn Valentine’s Day green.

Here are a couple of thoughts from our friends at Britain Unplugged to get you in the mood:
- Add some spice to your relationship…add extra chillies to your meal and turn down the thermostat by one degree this February 14
- Pick up a cook book and turn off the TV chef to get inspired for your Valentine’s Day meal. If all couples in the UK turned off their TVs this Valentine’s Day, it would save them nearly £780,000 and almost 3,000 tonnes of carbon dioxide.

Support Fairtrade

I received an email asking for a plug, well actually I've received quite a few recently, I want to share this one with you today because I think it's a worthy one so here's the details.

"There's a photography exhibition starting yesterday (12th February) at Bewley's of Grafton Street. It will run for 2 weeks.
It's a celebration of Fairtrade Fortnight and there are images of people who work on the Fairtrade farms that supply Bewley's.
It's free. Anyone can drop in and check it out.....

That in itself would be pretty boring, so here's more:

1. Bewley's is giving away a free trip to Nicaragua including flights, accommodation, and guide.
2. Bewley's is also giving away free afternoon treats for two every day throughout Fairtrade fortnight.
3. There are also some rather stylish bags to be had made out of hession sacks used for coffee.

Cookalong 2

After taking park in one of Gordon Ramsey's Cookalong a few weeks ago I couldn't help but join in again. The theme for this cookalong was the 70s featuring Prawn Cocktail, Steak Diane and Mandarin Cheesecake. I only made the steak diane this time but have all the ingredients ready for making the mandarin cheesecake over the next few days so keep an eye out for a post on that too.



I don't drink Brandy so I didn't want to buy a bottle for this recipe, instead I used some white wine.



I'm using this as my bookmarked recipe for this week seeing as I bookmarked it 2 weeks ago when Gordon announced this week's menu.

Cookalong

I took part in Gordon Ramsey's Cookalong a few weeks ago which I was dead excited about because on the menu was Minted Peas and Watercress veloute (which I was too late tuning in to the show to make), Gordon's Classic Lasagna al Forno and Lemon & Lime Syllabub.

The night all this was happening Rob was away so the fact that I got to make lasagne was perfect because Rob hates cheese and pasta so I never get to have lasagne making this my first ever homemade lasagne. It was delicious! I added in some peppers and mushrooms for some extra veg and ended up with extra portions for freezing for myself for later.



When I went to make the syllabub I discovered I had no limes and my last lemon wasn't in great shape so I ended up making an orange syllabub which was very tasty and zesty. The gingernut worked well with the orange, but I'll definitely have to try it sometime with the lemon and lime.



I've not been able to do another cookalong just yet but hopefully next friday night - especially with steak diane on the menu!!!

Good Natured Fruit

It seems like I refer back to my visit to Enjoy the Taste of Scotland quite a bit but I can't help referring to it once more because a couple of weeks ago I spotted something I tasted there and had remembered enjoying them very much. Good Natured Fruit is now sold in Northern Ireland!!!! I've been buying the strawberries and raspberries and absolutely loving the taste of them - so much better than the other varieties of strawberries and raspberries in the shop. The strawberries are beautifully sweet, juicy and plump and the raspberries have been used in some incredibly delicious muffins for me to have for breakfast.



If you're able to get your hands on these please do!!! Good natured fruit aims to work in harmony with nature to grow berries that are pesticide free using natural predators (like ladybirds) to get rid of greenflies. You should check out thier website for more details while I get on with munching these strawberries!

Mini blogger meet up

Well last night was fun! Craig McGill who was my contact for going to Enjoy the Taste of Scotland a couple of weeks ago, emailed last week asking would I like to meet up for drinks because he'd be in NI for a day or so. He asked if I could email a few other food blogger type folk from the NI area and ask them to join in to hear more about plans for a possible NI event. Most of the replies were a 'no' due to work/family commitments, for some a weeknight just didn't suit and living a little too far from Belfast for some factored in to the decision making. However there was a couple of yeses and so plans were made to meet in the Kitchen Bar which had to be changed seeing as they were having some live entertainment so we ended up changing plans on Wednesday to meeting in Brownes on Boucher Road which was a great spot, not too noisy and we ended up having some really tasty food (battered squid, chicken goujons, cheesy garlic bread and chips for nibbles followed by chocolate fudge cake and strawberry cheesecake).



There ended up only being 3 of us due to some last minute changes of plans of other folk which was a shame but still a good meet up. There was myself, Craig and the well known and loved Grannymar. I'd never had a meet up with other bloggers so it was quite exciting for me. We spent some time chatting about local food and tastes, about some of the places to visit for foodie treats in Belfast and also a lot about blogging, which was inevitable really! But we also spent some time talking about the Scottish food event Craig was involved in organising and about the idea of a Northern Irish event. I'll be excited to see the outcome - it would be great to have an event like the Enjoy the Taste of Scotland because we can often take for granted the products that we have on our shelves. However like I said in my review of ETOS I hope that some of the food producers do some cookery demos with their food for new creative ideas of what to make with them as well as allowing people to sample them as they are (unless it's meat or something else that should really be cooked!!!!).

I'll keep you all updated with any.... erm.... updates (:-S Yes I do need to work on my sentences!) Watch this space!

Foodie packages

On Wednesday this week I came home to a few packages that had been delivered and I was very excited! Generally I'm quite excited about any package - like a kid at Christmas or something.

The first was a package from Oleifera who I had met at Enjoy the Taste of Scotland a few weeks ago. I was so excited, I had given them my address to have a sample bottle sent out to me and I was surprised that they had sent it and also that they'd sent such a large bottle!!!!



It's rapeseed oil that has half the saturated fat that olive oil has, can help to lower cholesterol, has your essential omega 3 and omega 6, and even has a high smoke point. I'm really looking forward to getting to use this in a few recipes - and then blog about it ;-)

The second package was something I had ordered on Ebay after seeing Megan from Megan's Cookin had ordered some herself. I ordered 60 vanilla pods for £12 with free P&P! Bargain seeing as it's £2.50 for 2 at my supermarket!



Stewie couldn't resist sneaking into photos again.... silly pup.



Anyways I can't wait to get using all this now!!! I'll have to come up with some exciting recipes for these ingredients!

Enjoy the Taste of Scotland Review

Well Enjoy the taste of Scotland was last Friday and only now have I had time to stop and write a report on how it all went.

It all started at 5.30am on Friday when I woke up and got ready for the day then started the drive up to the airport for my flight on sleazy jet. As I arrived in the queue for check in I turned around to see who was behind me and to my surprise there stood an old school friend. We ended up chatting all the way to Glasgow - in the departure lounge, on the plane, waiting for luggage and on the bus into Glasgow, then we went our separate ways but I really enjoyed our chat and it did keep me awake seeing as I'm not used to being awake at that time of day!

I arrived in Glasgow about 9.30am and the event wasn't starting until around midday so off I went for a walk down Sauchiehall Street - this street became famous for me when I was working in WHSmith because we were almost always in tight competition with the Sauchiehall Street store for all sorts of things. Anyways, I had a walk round and decided that although I'd be spending all my afternoon eating and nibbling that I was rather hungry. I had to laugh at myself because I had travelled to Glasgow to try some new and different food and I end up going into McDonalds for a Sausage McMuffin and OJ - yes I'm ashamed but I far prefer the breakfast menu in McD's to it's main menu.

Noon rolled round and I had just arrived at the big white tent in George Square.



There were lots of people running around like mad trying to set up last minute bits and pieces and me standing wondering where on earth I'm supposed to go or who I'm supposed to see. I end up grabbing someone who was trying to rush past me holding a radio (that must mean they're important right?) and asking where the press go, I was pointed in the direction of "Reception" while the girl rushed on to her emergency. I walked up to the desk feeling a little out of my depth and said who I was and that I was looking for Craig (my contact). Craig turned round to greet me, he handed me a press pack, a press USB pen and a press badge.



I was sent off to play round the various stalls and taste lots of different samples. I first arrived at Kingsmill and despite having a big bag for collecting samples and info was given another bag full of loaves and baps - a very generous gift and gesture but unfortunately I had to give the bag away because there was no way I would be able to get it on the place home. Warburtons tried to do the same but I had to refuse.

I went on and chatted more with lots of other food companies and brands including Border biscuits who sent me home with some lovely butterscotch crunch and chocolate chip shortbread (they went down well with a cup of tea!).

I got chatting to Greenvale - a potato producer - who mentioned knowing Wilsons Potatoes here in NI to which I replied "oh you know Angus? He's a good guy" and the guy looked at me blankly leaving me thinking that either my friend Angus Wilson is a liar (highly unlikely) or that this guy was just clueless.



Patterson Arran have also sent me home with enough oatcakes to last a life time! May need to use them to cater for youth group a few times.

I was still walking round nibbling almost anything people were offering and ended up feeling like something a little fresher than Mrs Tilly's Butter Tablet or Dean's Shortbread or some First Milk cheese - don't get me wrong I loved all of these tasty treats but my mouth was just a little dry and in need of something a little sweeter. I stumbled across Good Natured Fruit with some tasty strawberries - they're a pesticide free strawberries and raspberries. I got talking to a girl about how they go along the rows placing ladybirds on each of the plants to get rid of nasty bugs out to destroy. You could really taste the difference!

I also stopped by Oleifera who apparently are posting out a complimentary bottle of rapeseed oil, which I'm quite excited about. I went into the kid's zone for a nosy and got talking to a girl about an education scheme by the Royal Highland Education Trust for schools that is aimed at raising awareness of the importance of red meat in a healthy balanced diet and teaches children about the journey of cattle, sheep and pigs from farm to plate including animal husbandry, basic nutrition and what various world religions believe about red meat. Being the nerd that I am I was quite excited about this scheme.

I came across R & K Drysdale who were giving away a sample of peeled swede in a plastic bag that can be microwaved in the bag then mashed or sliced or whatever. So expect a blog post shortly about the results!

I decided after all that walking around Sauchiehall Street and then all around the exhibits that I needed to take a seat and the only seats I could find was the rowed seating for the cookery theatre so I got comfy and rested my feet for a bit. I had a look around and spotted Nick Nairn, who had almost run me over a few minutes earlier by running around the place pushing a trolley and being followed by a camera crew, getting set up to film a cookery demonstration.



It was also at this stage that I had spotted the walking Macsween haggii looking like happy chappys but I'm sure the people inside the costume were melting with the heat. (I also spotted a Baxter's soup man walking around waving and skipping too).



As I was sitting resting weary bones I also spotted someone sitting on her own also chilling out a bit. I decided to go over and introduce myself and it turns out I'd just met Lynn from Lynn's Cooking Blog! We ended up being buddies for the rest of the day. We hung around for the opening speeches then headed out for some tea and came back to do a little more browsing of the displays again.

This time round I got talking to a guy in a kilt giving out flyers on how to cook steak to perfection - I'll be sticking that up in my kitchen for future reference! I tried some Mackays marmalades and preserves and really enjoyed the variety of flavour and the natural flavours that came through in them. And also got talking to a girl from the Really Garlicky company who gave me a great press pack that included a bulb of smoked garlic (again expect to see some blog posts including this!). Then stopped by the Tunnocks stand to get some tea cakes for Rob who I had left at home alone with Stewie for the day.

Not all of the food on display has originated in Scotland - but then I suppose that's a difficult thing to do anywhere now. I came across Monaghan Mushrooms, who have some farms in Scotland too apparently. I also was given a packet of Yeungs chinese curry mix which I'm pretty sure isn't traditionally Scottish, but they are Scottish based and have been for over 18 years! There was also a stall for Edinburgh Tea and Coffee which prompted us to ask exactly where in Scotland they were growing the coffee beans and tea leaves.

There were also some cookery demonstrations on in the "Cookery theatre". I sat, watched, listened and even smelt my way through one by Joe Queen from Macdonald Hotels which I really enjoyed. I would have loved to have seen more cookery demos and in particular by some of the exhibitors themselves to show the versatility of their product and also introduce new ideas for using their product.

It was an interesting day, particularly when exhibitors asked "Which publication are you from?" - I eventually learned that saying I was 'freelance' was much less complicated than saying 'I'm a blogger' (which the writer for Farmer's Weekly who I got chatting to for a while at the airport on the way home told me was much easier than saying any publication sometimes). All in all I really enjoyed my day, despite my flight home being delayed a few hours and making my day that little bit longer. I enjoyed talking with food producers and cooks and bakers about food and learned quite a bit about the Scottish food scene, however I really would have liked to see more primary produce instead of the sweets companies, bottled water companies, and a few other random companies. And as I said earlier in this post I really would have liked to see more cookery demos and things from the actual exhibitors themselves as well as the scheduled cookery theatre program.

It really was quite an adventure for me trying out some products that are either hard or impossible to obtain in Northern Ireland. There were so many other companies there that I could talk about but this post is already long enough, so check out the Enjoy the taste of Scotland website for more details on that.

I really hope something like this can happen over here sometime! It would be great to see some more of our local produce getting a plug.

Going to Enjoy the Taste of Scotland

Today I'm away to Enjoy the Taste of Scotland being held in George's Square in Glasgow. I posted about it before here but can't belive it's actually today! It's going to be a great event. Lamb and Apricot Stew

I talked a few days ago about how I would post my new and improved recipe for the turkish lamb and apricot stew that I had made as my entry in RTE's cook of the year competition, so here it is! I've not posted a photo, because I forgot to take one but it looks the same as the original dish.

All changes or additions have been written in italics

Lamb and Apricot Stew

Serves 3-4

Ingredients

2 tbsp oil
2 shallots, diced
2 garlic cloves, minced
1 tsp ground cinnamon
3 whole cloves
400 g boned leg of lamb, cubed
400g tin of chopped tomatoes
1/2 pint water
10-14 dried apricots
1 dried chilli, finely chopped
1 sprig of rosemary, chopped
1 tsp grated nutmeg

1 tsp clear honey
chopped fresh parsley, to garnish
chopped toasted almonds, to garnish
salt and pepper

Recipe
1. Heat the oil in a large pot. Add the shallot and garlic, sauté for 5 minutes.
2. Stir in the ground cinnamon and cloves; fry for 1 minute.
3. Add the lamb, cook for 5-6 minutes, stir until browned.
4. Add the tomatoes, water, apricots, chilli, rosemary, nutmeg and add seasoning. Bring to the boil the cover the pan, reduce the heat and leave to simmer for 45 minutes.
5. Stir in the honey and cook for 15-20 minutes, until the lamb is tender.
6. Serve garnished with some chopped almond.

News just in....

Got the call from RTE this morning, I didn't get through to the next round, but Miss Geeky Pants did!!!! I'm so excited for her not just because she is an ahahahahahahamazing cook but also because she really wanted to get to do the next challenge of being given a hamper and told to create something with it... I would have loved this too, but realistically when I think about food blog events like Platinum Chef and Royal Foodie Joust and even the ones where you're given one ingredient and told to be creative with it, I realise that for me I need to think through what I'm going to do, ponder ideas and take my time over it, I really couldn't do the next round very well at all!

Anyways cooking this week, at least the first half of the week, will be mostly using up leftovers so there won't be many updates, but i'll be blogging the new and improved stew recipe soon. I was also out for dinner on Saturday so might do a review as well.

Also I have more news!!! In a world where there are loads and loads of food blog events, I've come up with an idea for a new one which I'm hoping to post about soon but keep checking back for details!!!!

News update

I have a few things to update you all on.... food related but not much to do with cooking.

1. I posted recently about how I had signed up to take part in RTE's Cook of the Year competition. Well I headed to Derry/Londonderry for the "auditions" on Saturday with the loverly Miss Geeky Pants who also entered.

It was such a fun morning! I made lamb and apricot stew with some edits that totally changes the taste of this recipe... don't worry I'll blog the new version soon! It was so tasty and the judges seemed to like it, the dish was left with them after talking to me and it came back almost empty!

There were 5 of us competing on Saturday and the competition was fierce! There was an incredibly mediterranean inspired potato bake, Miss Geeky Pants made an incredible Goan Curry, there was some good curried parsnip soup with wheaten bread and a beautiful sponge cake that was to die for!!!! We haven't heard yet who is through to the next round but should apparently know tomorrow! I'll keep you informed as tot he outcome for Miss Geeky Pants and I! Here's the 2 pics I took... I did mean to take more but was all caught up in the moment!




2. I've signed up as a "featured publisher" for Foodbuzz and so have some ads for them in my side bar.... which is another announcement in itself but I'll just tell you about it in this announcement because "Ruth's Kitchen Experiments" now has 2 side bars in order to facilitate the ads and not send all my stuff to the end of the blog (and I've also got a new header for the blog too). Supposedly I'll get a little money for the trouble of having the ads there, but I'll see how it goes, I doubt it'll be much, but it's better than "nowt"!!!

3. I've joined another cooking blogroll: The Great Cooks Blogroll. If you're a food blogger you should really sign up, it's a great way to get more traffic to your site but also a great way to build community and get some inspiration yourself! If you're not a food blogger, I still recommend having a look and getting some inspiration for your home cooking anyways and seeing what's out there!

Well I think that's all my news for now. I'll be sure to post the new and improved lamb and apricot stew and let you know the outcome of the auditions! Ciao for now!

Enjoy the Taste of Scotland

I've spent some time researching the costs of flights to and from Glasgow today because I heard about an event called "Enjoy the Taste of Scotland". It sounds like a really exciting event where lots of the local Scottish food companies and producers will share their products for sampling and there'll also be some cookery demos by some top chefs. The event is being run by Tesco and aims to showcase more than 100 suppliers of Scottish produce & food, wine and much more. It's being held on 25th-27th April at Glasgow's George Square, from what I gather the 25th is for media/journalist type people, while 26th and 27th is a free for all, and it really is free for all with no cost for admission!

Really hope something similar comes to Northern Ireland soon! It'll be fantastic! In the meantime i'm real excited about going to this, and if you can go, you should!
