Thai style cooking.

I came across a recipe in a booklet produced by the Ulster Pork & Bacon Forum which I got at the supermarket recently and decided I had to try it, however I made it tonight with chicken instead of the whole pork fillet the recipe in the book uses.

It was delicious and we actually had some of it in tortilla wraps - so yummy and very easy once again!

Roasted Thai style Chicken
with sticky coconut rice and a chilli dipping sauce

Serves 2

Ingredients

500g chicken

For the marinade
2 cloves of garlic crushed
3 cms of ginger grated
1 tbsp soy sauce
1 tbsp hoi sin sauce
1 tbsp sesame oil
1 tbsp soft brown sugar
1 tsp chinese 5 spice

For the sticky coconut rice
250g long grain rice
400ml coconut milk
Pinch of fresh coriander (cilantro)
1 red chilli (deseeded and finely chopped) (I used a green chilli)

For the dipping sauce
3 tbsp soy sauce
1 red chilli (de-seeded and finely chopped)

Recipes
Roasted Thai style chicken
1. Mix the marinade and cover the chicken. Cover and leave for an hour (or overnight if possible)
2. Place the chicken in an oven dish and cover with foil.
3. Cook for 45-60mins.

Sticky coconut rice
1. Cook the rice in 500ml of boiling water until the water is almost evaporated.
2. Add the coconut milk to the rice and season to taste.
3. Continue to cook until the rice is sticky.
4. Mix in the coriander and chilli.

Dipping sauce
Mix the soy sauce and chilli

Absolutely delicious!

Bangers and Mash - with a twist

I've never really had bangers and mask much in my lifetime, however I recently saw someone on TV eating some and got a craving! So tonight for dinner I made it with a couple of little twists.

For those who don't know what "bangers and mash" is, it's pork sausages and mashed potatoes.

Bangers and Mash with a twist aka Honey Glazed sausages and Champ

Serves 1

Ingredients

3/4 pork sausages
1 tbsp honey
1 tsp vegetable oil
2/3 medium sized potatoes
1/4 cup chopped Scallions

Recipe
1. Chop potatoes and boil for 20-25 minutes. (I left the skins on but you can peel them if you like)
2. Heat the oil and honey in a pan. Add sausages and cook. (An alternative way to do this step is to mix the honey and oil in a bowl and let the sausages marinade in this for 10 minutes and grill)
3. Mash the boiled potatoes. (At this point you could add a little milk and butter to the mash to make it creamy) Stir in the scallions.
4. Serve.

Very VERY yummy! And again ever so simple. I also had a little gravy with this to add a little extra but it's good as it is too.

Chicken in coke

Sounds strange right? Chicken cooked in coke? That's what I thought when I first saw this recipe in Easy food Magazine but thought it would be worth a try. And it turned out delicious!

So here goes... a long overdue recipe for the blog, slightly edited from the original.

Chicken in Coke

Serves 2


Ingredients

450g Chicken (I used chicken breast)
250ml coke
4 tbsp tomato ketchup
4 tbsp worcestershire sauce
1 tbsp flour
pinch of salt and pepper

Recipe
1. Mix coke, ketchup, worcestershire sauce, flour, salt and pepper in a bowl.
2. Place chicken in oven proof dish and pour the sauce over the top.
3. Place in the oven at 180oC and cook for 70-80 minutes.
4. Serve with rice or potatoes.

Ooops

I know I promised a new recipe a few days ago, but this week has turned out to be hectic so turning to old recipes I know off the top of my head with minimum cooking required so I haven't been able to do it just yet. I'm leaving tomorrow for a weekend away with our young people in church so won't be cooking again til Monday.... hold tight, it'll be here soon!!!!

Cooking again

Last night we had one of our latest favourites - BBQ Ribs with some curly fries and it was great to have good home made food again.

Tonight I'm planning on doing a new recipe that I found in Easy Food Magazine which I'm pretty excited about cos I'm not sure what it will taste like but it sounds really interesting. Check out the blog tomorrow for a report on it!!!!

Back to cooking!

We're back from our honeymoon! And boy I'm glad cos I really missed being able to cook in my kitchen. We had a good time away, with lots of relaxation, but we were missing some food. We stayed in a lovely villa so we were cooking for ourselves some nights and we were really glad we took some meat out there with us cos there was very little meat available in the local supermarkets, they mostly stocked cooked meats and so on, so I'm real excited about going for groceries today and cooking tonight! Hmmmm I may need to get out more.

Ruth's Leftovers Pasta

Seeing as we're heading on our delayed honeymoon this Thursday I'm trying to use up some of the bits and pieces we have in our fridge, so tonight I made some pasta as follows:

Ruth's leftovers pasta

Serves 1


Ingredients

100g spaghetti
200g mushroom bolognese sauce
1 diced chicken breast
1 sliced green bell pepper
5-8 button mushrooms
1 tbsp butter
Handful of shredded cheddar cheese

Recipe
1. Brown chicken in a pan (5 mins)
2. Add the sauce and peppers to the pan and simmer for 15 minutes.
3. Boil salted water and add pasta. boil for 10 minutes (or as required according to the packet instructions)
4. In a separate pot melt the butter and add the mushrooms. Cook for 5 minutes.
5. Drain pasta, add chicken, peppers and muhrooms. Mix
6. Cover the pasta with the cheese and allow to melt. Serve.


Very tasty, simple and now I've less in the fridge to use before we go! Yay!
