I've started to add some of the links to foodie blogs that I subscribe to into a list on this blog for anyone who may be interested in having a look through them. I have only added those with names beginning with A-G so far and will add more as soon as possible. For now though enjoy the links while I enjoy some chicken tikka tonight!

BBQ Ribs
BBQ Ribs
Serves 2
Ingredients
1 rack of raw ribs (ask your butcher to divide into individual ribs)
0.5 cup ketchup
0.5 cup bbq sauce
0.5 cup honey
1 tbsp garlic butter
1 tsp chili paste, or crushed red pepper flakes (optional)
Recipe
1. Boil ribs in water on a medium boil for 2-3 hours (this makes the meat soft and comes off the bone easier)
2. Preheat the oven to 180°C
3. Mix ketchup, bbq sauce, honey, garlic butter and chilli/red pepper flakes.
4. Once ribs are boiled, marinate them in the sauce for 10-15 minutes
5. Place in the oven for 1 hour.
6. Serve and eat - and have lots of tissues handy for sticky sauce!!!!
These were delicious! The only problem with this recipe was that there wasn't enough!!!
I forgot to take a photo just before eating and remembered when this was all that was left

This is what was left on Rob's plate halfway through dinner.... he was leaving his chips cos the ribs were so tasty!

While looking through other ideas for ribs i found this on www.cooks.com:

Take car keys out of pocket or purse. Get in car. Drive to nearest Applebee's Restaurant. Be seated. Order large "Riblet Platter", delete slaw, add extra fries. Wait approximately 10 to 15 minutes. Enjoy!

Creamed Corn
I first had this when I was in Tennessee on my internship and LOVED it. So i decided to give making it a go.

Creamed Corn
Makes 2 portions
Ingredients
1 tbsp butter/margarine
1 tbsp flour
1/2 cup of milk
200g of corn
2/3 sliced button mushrooms (optional)
1 sliced red pepper (optional)
Recipe
1. Melt butter, stir in flour.
2. Add milk slowly, stirring with whisk until completely blended, thickened and gently bubbling.
3. Add kernels and simmer about 3 minutes. (Add mushrooms and red pepper)
4. Season with salt and white pepper.
You can add all sorts of things to this to add different flavours e.g. chives, cheese, carrots, bacon (precooked), maybe even some spices like curry powder.
Very tasty, quick and easy.

Lack of cooking over the weekend
I had a real busy weekend with very little cooking:
Friday dinner was a Cottage pie only with a wee change to the recipe in the link: carrots were changed to a tin of drained garden peas and the sauce mix was changed to beef gravy with some worchestershire sauce added.
Saturday was a packed lunch fo sandwiches seeing as we were on the road for about 10 hours total and dinner was a couple of pizzas from dominos.
Sunday lunch was leftover pizza from Saturday and dinner ended up being some take away chinese seeing as I had to rush back to work for the evening.
Therefore Monday lunch ended up being leftover chinese from Sunday.
Planning a little cookery for tonight with some defrosted meals I made last week.

Barbeque Chicken Pizza
I made this based on a recipe from Good Eats n Sweet Treats by MrsPresley and it turned out delicious:
Barbeque Chicken Pizza
Serves 2
Ingredients
1 tbsp olive oil (however I've started to use an oil spray which means i use much less than this)
1/3 red onion, sliced
1/2 cup BBQ sauce
2 tsp honey
1/2 to 1 tsp chili paste, or crushed red pepper flakes (optional)
store bought pizza dough/pizza base (I went with the pizza base)
1 to 1-1/2 cups shredded mozzarella cheese (however i used cheddar and it turned out great)
1 boneless skinless cooked chicken breast, shredded
2 tbsp fresh coriander, chopped (optional) (but I used oregano instead and it was yum)

Recipe
1. Preheat oven to 190 degrees C
2. Heat the olive oil in a large skillet and sauté onions on low heat, stirring frequently, until golden and caramelized. Set aside.
3. In a small bowl, combine the BBQ sauce, honey, and chili paste.
4. Prepare pizza dough or set pizza base on chopping board.
5. Spread BBQ sauce over the pizza dough, top with shredded cheese, chicken, and caramelized onions. Sprinkle cilantro(/oregano) over the top if desired.
6. Bake for 13-18 minutes, or until cheese is melted and crust is golden.
Was so so soooo yummy. I left the cheese off one half for Rob, and had put fewer onions on his side (however these were all picked off in the end). Served with crispy potato wedges.

Raspberry Muffins and Chocolate chip muffins
Tonight i made a few muffins.... I had been craving a raspberry mufin for a while now and decided I would make some.
Raspberry Muffins (adapted slightly from a recipe found on allrecipes.com
Creates 6 muffins
Ingredients
2/3 cup all-purpose flour
1/2 cup rolled oats
2 tablespoons packed brown sugar
1.5 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/2 cup milk
1/2 egg, beaten
1 cup fresh raspberries
Recipe
1. Preheat oven to 190˚C
2. Line a muffin pan with paper or foil muffin liners, or grease with vegetable oil spray.
3. In a medium bowl, stir together the flour, rolled oats, sugar, baking powder and cinnamon.
4. Add the milk and egg, mix until well blended, then fold in fresh berries. Fill muffin cups 2/3 full.
5. Bake for 20-25 minutes in the preheated oven, until tops are golden brown and muffins spring back to the touch.

My hubby isn't fond of fruit and veg as I've mentioned beore so I made him some chocolate chip muffins while I was at it. Very similar to the raspberry muffin recipe:
Chocolate Chip Muffins (adapted slightly from a recipe found on allrecipes.com
Creates 6 muffins
Ingredients
1 cup all-purpose flour
2 tablespoons packed brown sugar
1.5 teaspoons baking powder
1/2 cup milk
1/2 egg, beaten
1 cup chocolate chips
Recipe
1. Preheat oven to 190oC
2. Line a muffin pan with paper or foil muffin liners, or grease with vegetable oil spray.
3. In a medium bowl, stir together the flour, sugar and baking powder.
4. Add the milk and egg mix until well blended, then fold in chocolate chips. Fill muffin cups 2/3 full.
5. Bake for 20-25 minutes in the preheated oven, until tops are golden brown and muffins spring back to the touch.

Butternut squash with sage
This is made courtesy of a recipe from The cooking fiend on the "smells like home" blog.
I had bought a butternut squash in the supermarket with the thought of trying something new with it. I rarely have butternut squash and when i do it's usually roasted so I came across this recipe and decided to try it. Very tasty and simple. I had it instead of potatoes or another sidedish with my chicken pie and will do it again!
Butternut squash with sage
Serves 2-3
Ingredients
2 tbsp butter
2 lbs butternut squash, pelled, seeded, and cut into 3/4 inch pieces (I cut them into 1/2 inch pieces)
1 tbsp chopped fresh sage or 1/2 tsp dried
2 cloves garlic, roughly chopped (the original recipe doesn't call for this but it was a nice addition)
1/4 cup water
Recipe
1. Melt the butter in a pan over medium heat.
2. Add the squash and garlic; season with salt and pepper. Cook, tossing frequently, until the squash is lightly browned, 5-6 minutes.
3. Add the water and reduce the heat to a simmer. Cover and cook until the squash is fork-tender, 8-10 minutes.
4. Toss with sage and serve
I unfortunately forgot to stir at one point and ende dup with slightly burnt squash which was still very very delicious, in fact it didn't taste burnt at all!!!! Give it a go!

Bunny Chow
Last night after dinner I said to my hubby, "We'll be having bunny chow for dinner tomorrow night." His response was, "Is there bunnies in that?!?!?!?" And I don't blame him for his surprise.... the name of this dish is misleading.
When I was in South Africa in 2003, I discovered Bunny Chow and found it to be rather yummy. Recently it just came into my mind and i thought well it's dead easy let's make it.
Bunny Chow
Ingredients
> unsliced loaf of white bread
> curry of your choice
Recipe
1. Cut the bread into two halves and put each half on its end.
2. Scoop or cut out the soft bread from the middle of the loaf and set the filling to the side.
3. Fill each half with curry.
4. Put onto a bowl or plate (if desired) with the soft bread that was scooped out.
5. Serve immediately. Use the scooped-out bread to sop up the curry. Then eat the remaining curry with the bread it was served in. Use a spoon if needed.
You don't have to use curry as the filling, in fact you could put pretty much anything in it.... I plan to try it with bolognese or chili con carne or spanish chicken or something. However for ours tonight I used Chicken Tikka Masala and it was delicious!!!!

Basic Curry
For dinner tonight I made some curry.... and I use the word made in the loosest way possible. I fried chicken, added Sainsburys Basic Curry Sauce, threw in a chopped chilli, chopped apple, raisins and chopped fresh corriander and let it simmer for 20 minutes or so. Served with rice and naan for me, mash potato and naan for Rob. I love this curry sauce however I worry a little about it because the jar cost 8p.... yeah that's all 8p..... I wonder where people are being ripped off, or what is being skimped on, or what quality the ingredients are in it and even how healthy it really is.... I really gotta make it from scratch sometime, just hope what I make will be as nice! Either make it from scratch or buy a more reasonably priced sauce.
Fat weekend
This post is a copy from my blog, i thought it applied to this blog too.
Recently I've been trying to eat healthier and exercise a little more to try and lose a little (emphasis on little) weight. However, this past weekend has been filled with a LOT of eating.... grrrr.
Saturday night, Rob and I went to dinner at Rob's Dad's house with his stepmum and my parents. To start there was crisps, carrot and celery sticks and dips... those crisps were addictive. Then dinner was BBQed chicken breast, potato wedges, green leaf salad, potato salad, coleslaw...... so yum, but think I had too much of that. Then dessert: strawberries, marshmallows, chocolate dipping sauce, lemon roulade, chocolate cheesecake..... i thought i was gonna explode, but again dead yummy.
Then Sunday night was a meal with the church music group seeing as I ocassionally play or sing with them. We all met at Christine's house (she organises the group) where she had put on an amazing spread:
lasagne, quiche, green leaf salad, waldorf salad, orange salad (grated carrots and mandarin segments in orange jelly), green salad (chopped apple, celery etc in green jelly), sliced ham, pineapple, prawns (with thousand island dressing), crisps and dips, scotch eggs, pork pies, bean salad, peanuts, morrocan salad, potato salad and lots more which i'm struggling to think of right now. I had filled my plate and cleaned it then went back for some more..... not realising there was dessert to come too! Dessert: fruit salad, pavlova, bannoffee and pecan roulade. Then there was tea and coffee with little tray bakes and the like! Again I thought i was going to explode.
It was all very impressive, however now I'm feeling the guilt of all that eating after trying to eat sensibly and healthily.... I fear I'll be eating carrot sticks this week lol

Orange chicken skewers
After seeing this done on Ready Steady Cook (which I love the new set for by the way!) I decided to give it a go. However it looked quite juicy and yum on the show, mine turned out rather dry instead. Tasty but would need a dip to accompany it in future.
Orange Chicken Skewers
Serves 1
Ingredients
4 chicken mini-fillets
1 tbsp soy sauce
1 orange, zest only
2 tbsp olive oil
You'll need 4 wooden skewers, soaked in water for ten minutes before using
Method
1. Place the chicken in a small bowl and add the soy sauce, orange zest and olive oil. Leave aside for five minutes to marinate.
2. Thread each chicken mini-fillet onto a skewer. Heat a griddle pan and fry the chicken skewers for three minutes on each side, or until cooked through. Serve immediately.

Marinade Madness
Yesterday at the butchers Rob and I picked out what we wanted for dinner tonight. Rob got a steak, I got a couple of chicken drumsticks. and here's what we did with them:
Steak in Herb Marinade

Serves 1
Ingredients
1 Sirloin Steak
4 tablespoons olive oil
3 tablespoons Worcestershire sauce
2 teaspoons garlic, minced
1 teaspoon rosemary
1 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon pepper
Recipe
1. Grind the rosemary, thyme, salt and pepper in mortar and pestle (If you don't have a mortar and pestle put it in a food bag and bash the life out of it with the end of a rolling pin)
2. Mix this with the oil, worcestershire sauce and garlic.
3. Place steak on a plate and cover in the marinade. Leave to stand for 3 hours in room temperature, turning occassionally.
4. Heat frying pan (don't add oil - there's enough in the marinade)
5. Fry the steak on each side for 3 minutes (Rob likes a medium rare steak - adjust this time according to what way you like your steak)
Lemon Chicken Drumsticks

Serves 1
Ingredients
2 or 3 chicken drumsticks
2 tablespoons honey
1 lemon, sliced
3 cloves of garlic, sliced
Recipe
1. Place chicken into an oven proof dish
2. Pour the honey over the chicken and place the garlic and lemon slices on top.
3. Cook in the oven for 25-30 minutes at 190C
All of the above served with a choice of veg (sweetcorn for me, peas for Rob), baked potato and ciabatta to share.

4 tablespoons olive oil
3 tablespoons Worcestershire sauce

Lazy cookery week
Having a lazy cookery week: Rob and I went to the butchers and bought some southern fried chicken, chicken kievs, sirloin steaks and a few chicken drumsticks... so I fear the only recipe I'll add later this week is the chicken drumstick one.
For now tho, here was my dinner when I got back from Summer School on Sunday, (Rob finished off the bolognese i left for him)
Garlicy cheesy bacon potato wedges
Serves 1
Ingredients
3 medium potatoes
1 tbsp oil
Handful of grated cheddar cheese
2 or 3 slices of back bacon
Garlic mayonnaise
Recipe
1. Slice the potatoes into wedge shapes
2. Boil in water for 5 minutes
3. Place the wedges on a baking tray and drizzle the oil over them.
4. Bake in the oven at 180C for 20-30 minutes
5. Fry or grill bacon and slice into strips once cooked
6. Place wedges on plate and top with bacon and cheese. Serve with garlic dip.
Yum, dead easy and very tasty.
I shall have to work on a garlic mayonnaise recipe now instead of using it from a jar. A great dish on it's own, can be served with a side salad even.

Recipe idea anyone?
I have some fresh ginger and mixed chillies in the fridge, bought on a whim thinking I'll find a recipe... however I have not yet had time to look. Anyone have any ideas what I could do with them for an easy recipe?
